Zucchini and Bacon Scramble

IMAG0694This was my breakfast today. A zucchini and bacon scramble. It was fast, easy, and delicious, and I will probably have it to eat again next Sunday, as we do bacon and eggs every Sunday. Its also healthier, lower in calories and points (more veggies, less other stuff) than my usual Sunday meal.

This made a plate full of food for me, but if you had something else with it, say hash browns, you could split how much this makes between two people and no one would go hungry.

The ingredients are simple, and you probably buy most of them regularly or have them already on hand. Let’s get cooking!

Zucchini & Bacon Scramble

Ingredients
  • 1 medium zucchini
  • 3 slices uncooked bacon
  • 3 eggs
  • garlic powder
  • onion flakes
  • black pepper
Instructions
  1. Chop the bacon into 1" sections and place in pan. Cook as normal. Meanwhile, slice the zucchini in ¼" thick rounds.
  2. When bacon is just cooked, add zucchini slices, stirring occasionally. Let them get a little charred in spots.
  3. While the zucchini is cooking, scramble your eggs in a bowl, and season them with garlic, onion, and pepper. Add them to the skillet with the bacon and zucchini.
  4. Cool until eggs are done, plate, and serve!
